Brussels sprouts, apples and pomegranate salad

I use only doTERRA Certified Pure Therapeutic Grade essential oils and do not recommend to use any other essential oils internally.

Ingredients
- ½ large red onion, chopped
- 2 tbs red wine vinegar
- 2 tsp sumac spice
- ¼ tsp salt, plus more for the salad
- 2 cups Brussel sprouts, chopped
- ½ cup of pomegranate seeds (from about ½ large pomegranate)
- 1 medium apple, unpeeled, cored and cut into cubes
- Juice of ½ lemon
- 5 drops Lemon essential oil
- 1½ to 2 tablespoons natural honey
- ¼ cups olive oil
- ¾ cups of fried walnuts or hazelnuts, slightly chopped
- pinch of chilli pepper
Instructions
- Pickle the onion: in a small bowl combine red onion, vinegar, sumac and ¼ teaspoon of salt and put aside while you prepare other ingredients, ideally for at least 15 minutes.
- Combine all the ingredients of the salad, including the red onion, in the bowl. Add the lemon juice, Lemon essential oil, honey, salt and red pepper to the marinade to the pickling liquid, and mix thoroughly till honey is completely dispersed. Add to the salad and taste. Adjust the seasoning, if needed, adding salt, honey or lemon juice.
- This salad can be prepared in advance, but do not dress it up 1 hour before serving.
